A simple question as beginner: You offer ezPublish for Linux and Windows. I have a linux server and a Windows environment on my personal notebook from where I do my uploads. Which version do I have to download from your server: The Linux or the Windows version?

You can use either ones, it are just different archive formats for the same set of files

For the release version, use 4.0.1 (and a PHP5 AMP stack)
