How do I create simple line breaks within a text field in admin?

I guess what you mean is how to display line breaks:

http://ez.no/ez_publish/documentation/reference/template_operators/strings/nl2br

should help you: it is all about the rendering. You may want to override the template for the text field data type view (that's what I do)
