I'm wondering if I haven't found the root of my problems. I have EasyPHP1-7 installed on my system from a while back when I was trying to learn PHP coding on my own.
I installed the install bundle from here and ignored the old programs. I was unable to get into the admin interface to add products and such to the site with ezpublish.
Do I need to uninstall my EasyPHP and the ezpublish installer programs and only have the zip files?

I see from easyphp.org that, EasyPHP 1.8 version finale has 'finally' been released :)
I highly recommend upgrading to the latest version of easyphp (1.8, stable) as it appears on the surface to now provide support for PHP 4.3.10 (eZ publish requires 4.3.4 or later)

That is if you want to use easyphp ...
If I was in your situation I would lean towards using ez.no's eZ publish installers, instead.

Be sure to backup your database and eZ publish directory! I would also store these backups into another location (perhaps in a compressed (tar.gz / zip) archive)!
