This is achieved through the siteaccess subsystem. This system makes it possible to handling/host multiple sites including multiple administration interfaces. See? There is no problem to set up 4 sites with for example 6 administration interfaces (assuming that 2 of the sites need two different admin interfaces). As for the template-question: the template-override part of the web-based administration interface isn't 100% user friendly, it will be improved in the future. Some people find it easier to use and to understand than manipulating the override file manually. This is why we've used it within the first parts of the tutorial. You can also set up the overrides by editing the "override.ini.append" file of the siteaccess in question. This technique is described within the "Guestbook" part of the tutorial. I hope this helps.
