Documentation for Workflows?

I've searched the forums looking for some concise instructions for implementing Workflows, and until now have found nothing. I have a series of articles that I want to have published on a certain future date, and then unpublished on another still farther future date. In version 2, this was as easy as plugging the dates in the publish and unpublish boxes in the form, and making sure that the cron job was run regularly.

What is the procedure for version 3.2? Even after I think I've created a work flow with several parts to it, I can find no way to set the dates, nor attach it to a specific article.
