Im not sure what you are after here. Have you looked at the attributes of ezprice?

kernel/classes/datatypes/ezprice/ezprice.php

and at the shipping workflow event?

kernel/classes/workflowtypes/event/ezsimpleshipping/ezsimpleshippingtype.php

This is where looking at the php files help ;)

If you look at the simpleshippingtype file you will see inside it makes reference to two ini variables:

$ini =& eZINI::instance( 'workflow.ini' );

$cost = $ini->variable( "SimpleShippingWorkflow", "ShippingCost" );
$description = $ini->variable( "SimpleShippingWorkflow", "ShippingDescription" );

These are from the workflow ini file. So, if you set the values in that ini file, preferably as an override it should add the correct amount.
