Text block is used when you have to store only plain text. You can use some simple tags to format text (like in this forum)
XML Block is used when you have to store formated text using the Online Editor (which is now licenced under GPL) or SJSD (see Contribution section)

Hi,
A practical use is storing content to be displayed on mobile devices
Using a XHTML block you can store content suitable for mobile devices, you can also create custom tags , for WAP Devices
