Hi

Overriding PDF templates is just like overriding regular templates.

Go through the "Building an eZ publish site"
http://ez.no/ez_publish/documentation/toc/(from)/36647
to learn how to override templates, etc.

Use the template operator doc to se what's possible:
http://ez.no/ez_publish/documentation/incoming/pdf_template_operators
