This is really difficult, I had the same problem, but didn't solve it right. Now I found the following informations, but I didn't get information about the
{attribute_result_gui view=info attribute=$Attribute:item}
First I edit the content/collectedinfomail/form.tpl and added some nice informations for the email receiving user. The line problem is caused in the file design/standard/templates/content/datatype/result/info/ezstring.tpl, which should be overrided with the following content:
{section show=$attribute|get_class|eq( 'ezinformationcollectionattribute' )} {$:attribute.data_text|wash}{/section}
Important is the last empty line, otherwise you get no new line inside the generated plain email. Do you know how to remove the following information in the email without editing php kernel code:

User-Agent: eZ publish, Version 3.4.0
Message-Id: <numbersofnumber...>
